the siesta coconut cocktail
my husband and i just got back from a short & sweet anniversary trip in costa rica. we’re normally active travelers who enjoy exploring new locations, but after a couple of extra busy career years for us both, we just wanted to get away somewhere familiar and comfortable– a place where we could really embrace the culture of nap.
we decided to return to manuel antonio, costa rica, one of the first places we ever visited in latin america almost two decades ago. the area is a well-cared for eco-haven with abundant wildlife on the pacific coast of the country.
it’s also absolutely filled with siesta-loving capuchins.
and delicious, indulgent tropical cocktails at the swim up bar.
our favorite was the coconut sour, a gin drink with coconut cream + lemon. we had a good handful of them over our week. then, refreshed from all our vacation siestas, we came home and created a cleaner but just-as-delicious version.

THE SIESTA COCONUT COCKTAIL
2 oz | your favorite gin
1 oz | unsweetened organic coconut cream
.5 oz | organic agave nectar
.75 oz | fresh-squeezed lemon juice (approx. half of a medium-large lemon)
shake over ice. strain if preferred. garnish with lemon, lime, and/or an herb from the mint family.
*substitute 2 oz gin for 2 oz any non-alcoholic spirit. seedlip garden 108 is one of my favorite herbal alternatives.
*substitute unsweetened coconut cream + agave nectar for 1.5 oz coco lopez if preferred. processed ingredient substitution will create a richer, smoother texture but add sugar.
